Namak Para is one of this dishes I like to carry when I’m travelling. Often I’ve used it with chole as a quick bite. Traditionally it is of course fried. But I realized the baked version requires less fat both to make the dough and to cook it. It’s very quick to make too.
Ingredients.
- I cup whole wheat flour
- 1/3 cup all purpose flour.
- 1/3 cup ghee
- 1 tsp. Baking powder
- Ajwain.
- Salt to taste.
Sift the flours and knead all the ingredients to a stiff dough.
Keep aside for an hour.
Roll it out into a flat roti. Cut these into your favourite shape. My mother uses paani puri size katori to cut it into small discs. I’m lazy I just cut into strips.
Bake in a preheated oven at 180o for 15mnts.
Cool and store. Stays for about a week.
